Kinako Cloud Wafer is the wafer bar that turned a nostalgic mochi topping into a lunchbox staple. Five paper-thin wafers, each shaped like a puffy cumulus cloud, sandwich four layers of soy-milk cream that's been whipped with kinako — roasted soybean flour — and a little Okinawan brown sugar. The whole bar is dusted with more kinako, so the first bite leaves a faint golden powder on your lips.

The flavor is toasty and nutty, somewhere between peanut butter and a good sesame biscuit, but lighter than either. The wafers shatter, the cream is airy rather than greasy, and the brown sugar shows up only at the end, like a memory of warabimochi from a summer festival.

It's the sort of snack that makes grandparents nod and kids ask for a second one, which is why it's sold in every FamilyMart in Nagano and most of them everywhere else.

The package

A smiling cloud mascot with rosy cheeks holds a tiny sack of kinako. Multi-packs come in a matching blue-and-tan box with a cloud-shaped die-cut window.

The maker

Baked by Shinshu Kumoya Seika in Matsumoto, Nagano, a wafer maker founded in the 1960s that spent decades supplying anonymous wafers to ice-cream companies before launching a product under its own name. The cloud shape came from the view of the Northern Alps out the factory window.

Three things to know

  • The cloud mascot is named Kumo-chan and has an official birthday, 2 June, when the factory hands out free bars.
  • Each bar contains the kinako equivalent of about forty roasted soybeans.
  • The Nagano-only 'big cloud' version is twice the length and comes with a strip of postcards of the Alps.
