Snow Country Milk Drops appear in Niigata in late November and vanish with the last of the snow. They come in a flat tin that rattles pleasantly in a coat pocket, each drop an oval of cloudy white candy the color of fresh snow, with a soft, sweet amazake center that only reveals itself after a couple of minutes of patient sucking.

The outer candy is made with local milk and tastes gently of cream and a whisper of toasted rice. The amazake inside — the sweet, non-alcoholic rice drink Japanese families make from koji — adds a warm, almost custardy note that turns the whole thing from a plain milk candy into something you'd want on a cold station bench.

It's a slow candy. People in Niigata will tell you the trick is not to crunch it.

The package

A slim hinged tin, powder-blue with a white embossed snow-crystal pattern and a silver-foil band. 雪国ミルクドロップ is printed in an elegant condensed mincho typeface in navy; a tiny illustrated snow hut with a lit window sits in the corner. Inside, the drops are wrapped in twists of translucent white wax paper.

The maker

Produced by Echigo Yukiya, a dairy cooperative near Yuzawa that ran a roadside milk stand for skiers. The candy began as a way to use winter milk when the roads closed; the amazake filling was borrowed from the sake-brewing families next door.

  • Amazake has no alcohol at all — it's the same drink served warm at shrines on New Year's Day.
